Throughout my journey in the Coordinated Program in Dietetics, I have completed projects that highlight my skills in foodservice management, community nutrition education, and academic communication. Each project reflects the integration of leadership, creativity, and evidence-based practice. Cycle Menu Project (South San ISD)

Type: Foodservice Systems Management Project
I collaborated with my teammate to develop a cycle menu aligned with USDA guidelines, budget considerations, and operational needs for a K–12 school system.
This project sharpened my skills in menu planning, nutrient analysis, and teamwork under tight deadlines. I also gained a deeper understanding of how regulatory standards, sustainability goals, and real-world kitchen operations intersect.

Pomegranate Nutrition Education Script and Video

Type: Community Nutrition Project
I helped create a short educational script and video for a community nutrition program, promoting fruit intake and simple healthy habits through engaging content.
I gained hands-on experience in developing nutrition messaging that is culturally appropriate, age-appropriate, and accessible. I also practiced blending creativity with evidence-based guidance.

Nutri-News Newsletter & “Ask the RD-to-Be” Article

I helped launch the first issue of UTSA’s Nutri-News newsletter and wrote my first published article focused on evidence-based nutrition guidance.
I developed science communication skills by translating research into approachable messaging for peers and the broader community. This experience helped me grow as a future educator and advocate for accessible, accurate nutrition information.
